| SMASHED POTATOES | Lightly crispy, golden potatoes with a touch of rosemary and crushed garlic. Hungry, anyone? These wonderful smashed potatoes are easy to make and taste delicious. You can omit the olive oil if you wish for fat free smashed potatoes. Serve them with a big leafy green or chopped veggie salad like the Liver Rescue Salad recipe on the blog for a satisfying and tasty meal.

Potatoes are high in glucose that provides substance to the liver, as it’s precisely what the liver relies on to keep strong. It also helps build up glycogen storage, the very resource that protects us against blood sugar problems, weight gain, fatty liver, and dirty blood syndrome. Potatoes keep the liver grounded and stable, giving us a good constitution. They’re also shunned for being a nightshade, when in truth they have the ability to reverse many varieties of chronic illness.
2 lb baby potatoes
1-2 tsp olive oil
2 garlic cloves, crushed or finely minced
1 tsp finely chopped fresh rosemary
Sea salt, to taste
Chopped fresh parsley or chives, for garnish
Preheat oven to 425F. Place the potatoes in steamer. Cover with a lid and steam for 15-25 minutes, until tender. Remove from heat and cool completely.
Arrange the potatoes on a baking sheet covered with parchment paper. Using the back of a spoon or a small glass, carefully smash the potatoes until flattened. Top with olive oil, garlic and rosemary.
Bake until the potatoes are browned and crisp, about 20-35 minutes. Serve immediately, garnished with fresh parsley or chives. Serves 2-4

One of my intentions this year was to become more, as the kids say, “woke” (trying to use new slang makes me feel very awkward lol sorry). The past couple weeks I’ve been having some MAJOR moments of introspection. Aided by everything going on in the world at the present moment, i feel like I’m at the age where my eyes are finally being opened to REAL LIFE and all the sh*t that goes on. I’ve been realizing my own extreme privilege; educating myself on the long-standing injustices and prejudices in our world and its history; how we have such a long, long, long way to go as a global society.
Obviously i can’t do much about ALL the corruption going on right now, but there are some things i want to do to be a better individual and resource for you all.
I want to read more NONfiction, stories about real incredible people putting in the work to change the world and educate the masses. I want to be challenged more to think about difficult, uncomfortable things. I want to question the language, values, and ways of thought that i was brought up in. I want to speak up on here about things i am actually very passionate about in real life instead of keeping my mouth shut. And I want to be a better resource for those who don’t feel like health and wellness are attainable.
Normally i wouldn’t ‘announce’ changes i want to make, I just go ahead and freaking make them, but i want to know: is there something about health and wellness you feel doesn’t include you or isn’t possible due to your circumstances? Is there something you want to see more (or less) of in this space? Something i can do for you? (NOT playing hero here. I genuinely want to know and expand my own knowledge).

OUR FAV vegan cookie recipe 🍪🍪🍪 they don’t look like much, but we triple tested them.. They’re just right 👌🏽 the perfect amount of chewiness and crunch!! Save the post for when you’re next doing some baking! You will need:
2 cups almond meal
1/4 cup coconut flour
1/4 cup coconut sugar
A pinch cinnamon
2 tablespoons @pureharvest rice malt syrup
1/4 cup almond milk
1/4 cup coconut oil
1/4 cup dark choc chips
1/2 teaspoon baking powder
Pop all dry ingredients into a bowl and mix to combine, next add wet ingredients and mix. If the mix looks too dry (crumbly), add a touch more coconut oil, if too wet, add some more almond meal 👌🏽 dollop tablespoon amounts onto a lines baking tray and bake for 12-15 mins 😊🍫🍪
