When other edible fungi are fading, yellowfeet are out in full force filling our baskets. Sometimes also referred to as winter or funnel chanterelles, they can be light brown or orangish brown all over, or may have a yellow stalk and brown to dark brown cap. The dimpled cap is rolled under at first, then flattens out and becomes more trumpet shaped or wavy as the mushroom matures. The underside of the cap is usually light tan to ivory with branching vein like ridges, similar to golden chanterelles. The stipe can be tan or yellow, and is hollow. @la_nancydancy is going to be experimenting with different recipes and drying some for soups this winter. #wildfoodlove#craterellustubaeformis#mushroompicking

Winter is fully here in PNW, it’s wet, cold, and dreary. Thank goodness winter also happens to be citrus season. This Cara Cara Coconut Cream Panna Cotta will brighten any soggy day. What’s also great about this?! Besides the fact that’s it’s so creamy and fluffy, you can flavor this any way you want. Rose water, cardamom, chocolate anything!
Coconut Cream Panna Cotta
1 can of coconut cream
1/2 the juice from a Cara Cara orange
1 tsp vanilla
1 packet of gelatin
1/2 of water
Sweetened Condensed Milk to taste •Mix coconut cream, condensed milk, vanilla, and orange juice in a bowl.
•Put gelatin in 1/2 cup of water. Once spongy heat and stir until dissolved.
•Mix all liquids together and and stir until cool. •Pour into serving dishes and refrigerate until firm.
•Slice oranges, too and enjoy ✨
Some how ended up making a chocolate peanut butter fudge instead of the normal fat bombs I usually make. Definitely a delicious mistake I'll try to recreate.

Sometimes I definitely get frustrated feeling like my progress is slow. But then I look at photos and see the progress and I am BEYOND happy for that day that I finally got so frustrated about not doing anything.
It was literally wake up, go to work, come home, eat dinner, feel blah, go to bed, wake up and do it all over. Anybody else feel like that? 🤷🏼♀️💁🏼♀️
Changing it up and adding a routine was not the easiest thing to do but dang... I am so glad I did. If you find yourself feeling like I was,I’m adding to my bootcamp and I have a spot for you girl!

Wow. I’ve been really reflecting a lot lately on how much can change In a year. Here was approximately a year ago. Life was still great in its presence but so much has changed and I’m so grateful.
Take one little baby step everyday towards what you want. If you don’t know what you want- take steps towards things that make you happy and align with your true self (at this moment or what you wish to be like). Be present now, but get excited knowing your life is constantly evolving. 💕💕💕

#transformationtuesday 10 workouts of difference.
I had two weeks off for the holidays last year and for once I indulged and I enjoyed every minute of it.
My first chunk of runs this year, I was in pain. I was angry. I hated myself. I hated exercise. And I didn’t feel like I was improving.
But I kept pushing. Pushing through the ouches, even if it meant slowing down and walking. Told my nay-saying self to stop, we’re doing this for us this year, and just kept at it.
Today, while not breezy, I only had to stop twice to catch my breath/shake out my legs.
Improvement happens quickly, it’s just that we don’t notice it right away (i.e., my HR went from 64-59 rbpm - w/out a @fitbit I wouldn’t have known my innards are improving so well.) DONT give up. You’ve got this. Don’t let your excuses take over your life. But most importantly. Do it for you!
Being healthy and fit isn’t a fad, it’s a lifestyle. It isn’t finding a new trendy diet to drop the weight fast. It’s finding a balanced healthy lifestyle that is forever. Everything in moderation, moving your body and fueling it right.
Yes the number fluctuates a bit on the scale but I’m always fueling my body and working towards the best version of myself. I do it for my body, for my soul, for my husband, and my future family. You deserve to walk by the mirror and think to yourself “damn I look good, I look healthy, I look happy!” What are you waiting for?? Let’s create your transformation story!

Celebrated my dads 71st birthday this weekend by doing what we both do best — exploring! My family are my greatest inspirations. A runner, mathematician, and outdoor enthusiast his whole life, my dad is enjoying his later years by traveling the world, skiing, riding his bike constantly, volunteering, and otherwise encouraging me anything is possible, and to be my best. I’m thankful for all the adventures he’s sent me on, from Central America to Thailand to Alaska, and all of WA in between. Love my family! I jumped back into my workouts... broken wrist and all 👊🏻😝. You know, I used to HAAAATE exercise so this first broken bone errrrverrrr would be the PERF excuse to not workout, amiright?
I rested my body until I couldn’t take it anymore (about a week #stircrazy) and then modified alllll the things I needed to.
For most of my life, I never knew what to do to get exercise besides the DREADmill, and now I know alllll da moves and could even make my own routine 💁🏻♀️. Which takes me to... I am going to finish my current exercise program, this week, modified and with no weights, and then I’m going to make my own routine while this wrist heals and then I’m gonna do that program again for the 4TH time. (You hear that @joelfreemanfitness?!) 👏🏻🙌🏻💪🏻 Cool, right? Like who am I? Haha.
Anyway, I just wanted to tell you... exercise doesn’t have to sucks balls, be boring or complicated. You can go from hating it, to making your own “Broken Wrist Routine,” in the blink of an eye. Never give up on becoming the person you’ve always wanted to be... One of those freaks that exercises 4+ times a week was DEF on MY list... #nailedit
Learn to face your fears! I went skiing this weekend and I have had so much anxiety over it for the past week. Everyone kept saying “ Don’t hurt yourself.” And “ Be careful”. Finally I just placed the fear and anxiety to the side and did the damn thing. Conclusion- no broken bones, fell twice and I survived! ⛷🙋🏼♀️🤣😝
