Ingredients: 1 Cup Coconut Sugar 1/2 Cup Vegan Butter 1 Tsp Vanilla Extract 1 Tsp Peppermint Extract (optional to make it more festive) 1 Cup Oat Flour 1/4 Tsp Cinnamon 1/2 Cup + 2 Tbsp Raw Cacao Powder 1 Tsp Baking Soda 1/4 Tsp Baking Powder 1/2 Tsp Pink Salt 2 Tbsp Full Fat Coconut Mylk 1 Cup Vegan Chocolate Chips . Directions: . 1. Preheat oven to 350 degrees Fahrenheit & line a baking sheet with parchment paper. 2. Cream together softened vegan butter, sugar, and vanilla. 3. Add in all other ingredients & combine (excluding choco chips) 4. Mix in chocolate chips with hands. 5. Grab 1 tbsp of cookie batter, roll into a ball & place on baking sheet. Continue until all batter is gone. 6. Bake for 12 minutes 7. Let cool for 30 minutes 8. Enjoy! #bestofvegan

  • Creamy Pasta with Roasted Tomatoes and Crispy Topping by @crumbs.and.caramel 💛 Recipe: Ingredients:⠀ 1 lb small pasta noodles⠀ 1 lb cherry tomatoes⠀ 2 tbsp olive oil⠀ 2 cups Romesco or marinara sauce⠀ 1 1/2 cups raw cashew pieces (quick soaked in boiling water for 15 minutes if you don't have a high speed blender)⠀ 2 cups veggie broth⠀ 1/4 cup nutritional yeast, optional⠀ 2 tbsp vegan butter or olive oil⠀ 3/4 cup Panko bread crumbs⠀ ⠀ How To Make: Preheat the oven to 400°F. Line a baked sheet with parchment paper. Toss the cherry tomatoes in the olive oil and roast for 10-15 minutes, or just until some of them start to release their juices, shaking the pan around occasionally. Remove from oven and turn on the broiler.⠀ Prepare the noodles according to package directions. .⠀ Combine the romesco or marinara sauce with the cashews, veggie broth and nutritional yeast (if using) in the blender. Blend on high until smooth. Pour into a medium pot and whisk over medium heat until hot and slightly thickened. .⠀ Melt the vegan butter and pour over the panko bread crumbs in a small bowl, mixing well. .⠀ Drain the noodles and toss with the sauce in an oven safe dish. Gently fold in the roasted tomatoes. Sprinkle the prepared panko over the top and broil for 3-5 minutes or until the topping is lightly browned. Enjoy! #veganfoodspace #veganlunch #lunchideas

For the beetroot fillings I like to use lots of fresh Asian herbs: . Chinese celery Coriander Spring onion Shiso leaves Baby cucumber Fresh young ginger For the sauce you can pick your favourite chilli jam and mix with mayonnaise. I use this brand called “Follow your heart “ Veganise and some sesame oil . I also love the crunchiness so I added some roasted peanuts Voilà! Can’t beet the filling 🌱
