Last week I added corn and zucchini fritters to my classic garden salad and it was absolutely glorious. Super quick and easy, the recipe follows! CORN AND ZUCCHINI FRITTERS: Combine together the following:
310g tin corn kernels, drained, 2 zucchini, grated, handful of chopped coriander, 2 eggs, lightly beaten, 1/3 cup milk (I used almond), 1 cup flour (I used a buckwheat/whole meal blend), 1 tsp baking powder, 1/2 teaspoon ground cumin, turmeric, chilli and paprika, salt and pepper.
Cook over medium heat, and serve with rocket, fresh coriander, avocado and diced tomato 🎉🎉
